Ingredients
Pasta & Cheese
- 350 gm Spaghetti
- 100 gm Pecorino Romano Cheese grated
Sauce
- 2 Large Egg Yolks
- 1/2 tsp Salt or to taste
- 2 gm Pepper black, freshly, ground, or to taste
Instructions
- Gather all ingredients and equipment. This includes a large pot for boiling the pasta, a colander, a large skillet, a mixing bowl, and tongs.
- Fill the pot with generously salted water and bring to a rolling boil. Adding salt to the pasta water seasons the pasta itself.
- Add the spaghetti to the boiling water and cook according to package directions until al dente. Adding a drizzle of olive oil helps prevent sticking.
- While the pasta cooks, sauté the pancetta in olive oil over medium heat until crispy and golden brown. Render out the fat.
- In the mixing bowl, whisk together the egg yolks, Pecorino Romano cheese, salt, and black pepper.
- Before draining the pasta, reserve about 1 cup of the starchy cooking water. This will help create a creamy sauce.
- Add the drained spaghetti directly to the pan with the pancetta. Toss to combine.
- Remove the pan from the heat. Pour the egg mixture over the pasta and toss quickly to coat. The residual heat will cook the eggs gently, creating a creamy sauce. Add a splash of pasta water if needed to loosen the sauce.
- Serve immediately, garnished with fresh parsley and basil.
Recipe Notes
Good To Know
- For easier preparation, you can boil the pasta in advance. After cooking, cool it under running cold water, strain, and store it in the refrigerator.
- Ingredients can be prepped ahead of time for quicker cooking.
Expert Tips
- For a richer flavor, use freshly grated Parmesan cheese instead of pre-grated.
- Don't overcook the pasta. It should be al dente, meaning "to the tooth" or slightly firm.
- Taste and adjust seasonings as needed. You may want to add more salt, pepper, or herbs depending on your preference.
Storage Instructions
- Store leftover pasta in an airtight container in the refrigerator for up to 3-4 days.
- Reheat gently in a microwave or on the stovetop with a splash of water or sauce to prevent drying out.
