Ingredients
Batter Ingredients
- 2 cup Rice preferably short-grain, raw
- 1/2 cup Lentils also known as split black lentils, black
- 1 tsp Fenugreek Seeds also known as methi dana
- 2 tbsp Coconut freshly grated
- 1/2 tsp Baking Soda
- 1 1/2 tsp Salt or to taste
- Water Water as needed for soaking and grinding
Equipment
- 1 Appam pan or a non-stick skillet
Instructions
Prepare the Batter
- Soak the rice, urad dal, and fenugreek seeds in enough water for at least 5-6 hours, or overnight.
- Grind the soaked mixture into a smooth batter using a blender or food processor. Add water as needed to achieve a smooth, pourable consistency.
- Add the grated coconut, baking soda, and salt to the batter. Mix well.
- Allow the batter to ferment in a warm place for 8-12 hours, or until bubbly. This fermentation is crucial for the appam's texture.
Cooking the Appam
- If the batter is too thick, thin it out with 1/4 cup of water.
- Heat the appam pan or non-stick skillet over medium heat.
- Pour a small ladleful of batter into the center of the hot pan, allowing it to spread thinly and evenly to the edges.
- Cover the pan with a lid and cook for 2-3 minutes, or until the edges turn golden brown and crisp.
- Carefully remove the appam from the pan and serve immediately.
Serving Suggestions
- Serve hot appam with your favorite accompaniments, such as coconut milk, vegetable stew, or chicken stew.
Recipe Notes
Expert Tips for Perfect Appams
- Fermentation is key: The longer the batter ferments (within reason), the lighter and crispier your appams will be.
- Don't overcrowd the pan: Give each appam enough space to spread and cook evenly.
- Adjust the heat: Medium heat is ideal; high heat will burn the edges before the center cooks through.
- Experiment with toppings: Try adding a sprinkle of chopped nuts or seeds to the batter for extra flavor and texture.
