Instructions

Prepare the Batter

  • Soak the rice, urad dal, and fenugreek seeds in enough water for at least 5-6 hours, or overnight.
  • Grind the soaked mixture into a smooth batter using a blender or food processor. Add water as needed to achieve a smooth, pourable consistency.
  • Add the grated coconut, baking soda, and salt to the batter. Mix well.
  • Allow the batter to ferment in a warm place for 8-12 hours, or until bubbly. This fermentation is crucial for the appam's texture.

Cooking the Appam

  • If the batter is too thick, thin it out with 1/4 cup of water.
  • Heat the appam pan or non-stick skillet over medium heat.
  • Pour a small ladleful of batter into the center of the hot pan, allowing it to spread thinly and evenly to the edges.
  • Cover the pan with a lid and cook for 2-3 minutes, or until the edges turn golden brown and crisp.
  • Carefully remove the appam from the pan and serve immediately.

Serving Suggestions

  • Serve hot appam with your favorite accompaniments, such as coconut milk, vegetable stew, or chicken stew.

Recipe Notes

Expert Tips for Perfect Appams

  • Fermentation is key: The longer the batter ferments (within reason), the lighter and crispier your appams will be.
  • Don't overcrowd the pan: Give each appam enough space to spread and cook evenly.
  • Adjust the heat: Medium heat is ideal; high heat will burn the edges before the center cooks through.
  • Experiment with toppings: Try adding a sprinkle of chopped nuts or seeds to the batter for extra flavor and texture.
