Ingredients
For the Banana Fritters
- 4 Bananas preferably nendran bananas (or similar sweet variety), ripe
- 1 cup All-Purpose Flour also known as maida
- 2 tbsp Rice Flour
- 2 tbsp Sugar
- 1/2 tsp Baking Soda also known as bicarbonate of soda
- 1/8 tsp Turmeric Powder also known as haldi, for color and flavor
- 1/2 tsp Salt
- 1/2 cup Water or as needed to adjust batter consistency
For Frying
- 2 cup Coconut Oil or vegetable oil for deep frying
Instructions
Prepare the Bananas
- Peel the ripe bananas and slice them lengthwise into 3 equal pieces.
Make the Batter
- In a mixing bowl, whisk together the all-purpose flour, rice flour, sugar, baking soda, turmeric powder, and salt.
- Gradually add water, whisking constantly until a smooth, slightly thick batter forms. The batter should be thick enough to coat the banana slices.
Fry the Ethakka Appam
- Heat the coconut oil in a deep frying pan or kadai over medium heat.
- Dip each banana slice into the batter, ensuring it's evenly coated.
- Carefully place the coated banana slices into the hot oil, ensuring not to overcrowd the pan.
- Fry for 2-3 minutes per side, or until golden brown and crispy.
- Remove the fried banana fritters from the oil and place them on a paper towel-lined plate to drain excess oil.
