Prepare the Duck

  • Clean and chop the duck meat into bite-sized pieces. Wash and thoroughly rinse the basmati rice. Set aside.
  • Marinate the duck pieces with ginger-garlic paste, chili powder, coriander powder, turmeric powder, and salt. Let it marinate for at least 30 minutes, or preferably longer in the refrigerator.
  • Finely chop the onions, tomatoes, coriander leaves, and mint leaves.

Sauté Aromatics

  • Heat the ghee and oil in a large, heavy-bottomed pot or Dutch oven over medium heat. Add the cloves, cinnamon stick, cardamom pods, and bay leaf. Sauté for a minute until fragrant.
  • Add the chopped onions and sauté until golden brown. Stir frequently to prevent burning.
  • Add the chopped tomatoes and cook until softened and slightly mushy.

Cook the Duck

  • Add the marinated duck pieces to the pot and cook until they brown nicely on all sides.
  • Pour in 4 cups of water, bring to a boil, then reduce heat to low, cover, and simmer for about 20 minutes, or until the duck is nearly tender.

Layer and Steam the Rice

  • Stir in the chopped coriander and mint leaves. Add the rinsed basmati rice and salt. Gently stir to combine.
  • Add more water if needed to ensure the rice is adequately covered. Bring to a boil, then reduce heat to low, cover tightly, and simmer for about 15-20 minutes, or until the rice is cooked through and the liquid is absorbed. The rice should be fluffy and not mushy.

Rest and Serve

  • Once cooked, remove the pot from the heat and let it stand, covered, for 10-15 minutes to allow the flavors to meld. Fluff the rice gently with a fork before serving. Serve hot with raita (yogurt dip) and your choice of accompaniments.
