Ingredients
Main Ingredients
- 1 kg Beef Stew Meat cut into large cubes
- 6 Cloves
- 4 Chilies dried, red
- 2 tbsp Vegetable Oil for frying
Marinade Ingredients
- 2 tbsp Ginger-Garlic Paste
- 2 tsp Mustard Seeds ground
- 1 tsp Pepper ground, black
- 1 tbsp Vinegar white
- tsp Salt to taste
- 1 Onion large, finely sliced (optional)
Instructions
Marinate the Beef
- In a large bowl, thoroughly combine beef cubes with ginger-garlic paste, ground mustard seeds, black pepper, vinegar, and salt. Massage the marinade into the beef, ensuring even coverage. Marinate for at least 30 minutes, or ideally 1-2 hours in the refrigerator for maximum flavor infusion.
Pressure Cook the Beef
- Transfer the marinated beef to a pressure cooker. Add just enough water to almost cover the beef. Cook on high pressure for 20-25 minutes, or until the beef is tender but retains its shape.
Reduce the Gravy (Optional)
- Carefully release pressure from the cooker. Remove the beef. If there's excess gravy, simmer it uncovered over medium heat until it reduces to about 1/2 cup of a thick sauce. Set aside.
Roast the Beef
- Heat oil in a large pan over medium heat. Add cloves and dried chilies; fry until fragrant. Add sliced onions (optional) and cook until softened and lightly browned. Add the cooked beef and roast until deeply browned, stirring occasionally (15-20 minutes).
Combine and Finish
- Stir in the reserved gravy and cook over low heat, stirring frequently, until the gravy thickens and coats the beef.
Serve
- Serve the Goan Pepper Beef Roast hot, garnished with fresh cilantro or parsley (optional). Enjoy with creamy mashed potatoes, crusty bread, or fries.
Recipe Notes
Expert Tips
- For a deeper, richer flavor, use a combination of black and green peppercorns.
- Adjust the amount of chilies to your preferred spice level. Start with less and add more gradually.
- Don't overcook the beef! It should be tender but still hold its shape. Overcooked beef will be tough.
- For a truly authentic experience, use Goan vinegar if available. Alternatively, apple cider vinegar works well.
