Instructions
Preparing the Spice Base
- Heat coconut oil in a heavy-bottomed pot or Dutch oven over medium heat. Add mustard seeds and fenugreek seeds; let them splutter.
- Add chopped onions, shallots, curry leaves, and tomatoes. Season with a pinch of salt. Stir well, cover, and cook for about 2 minutes, or until tomatoes soften.
- Add minced ginger, garlic, and green chilies. Sauté until fragrant, about 1 minute.
- Stir in Kashmiri chili powder, black peppercorns, coriander powder, garam masala, fennel powder, and turmeric powder. Cook on low heat, stirring constantly, until the raw smell of the spices dissipates.
Cooking the Beef
- Add beef cubes and vinegar to the spice mixture. Toss to coat the beef evenly. Add salt and water. Bring to a simmer.
- Reduce heat to low, cover, and simmer until the beef is very tender, approximately 1.5-2 hours, or longer depending on the beef cut. You may need to add more water during cooking to prevent the curry from drying out.
Finishing the Curry
- If the gravy is too thin, remove the lid and simmer until it reaches your desired consistency. Taste and adjust seasoning as needed.
- Garnish with fresh curry leaves and serve hot with rice or roti.
Recipe Notes
Expert Tips for the Best Kerala Beef Curry:
- For an even richer flavor, marinate the beef in a mixture of yogurt, ginger-garlic paste, and a portion of the spices for at least 30 minutes before cooking.
- Using a pressure cooker can significantly reduce the cooking time. If using a pressure cooker, cook on high heat until the first whistle, then reduce to low and cook for 12-15 minutes. Allow pressure to release naturally.
- Adjust the amount of chili powder according to your spice preference. Kashmiri chili powder adds color without excessive heat.
- For a more authentic taste, use freshly ground spices whenever possible. The aroma and flavor will be significantly enhanced.
