  • Soak the tamarind in 1 cup of warm water for 15 minutes. This helps soften the tamarind and extract its flavor.
  • Extract the tamarind pulp by squeezing it through your fingers. Discard the fibrous remains. Strain the pulp to remove any seeds or impurities.
  • Heat the sesame oil in a heavy-bottomed pan over medium heat. Add the mustard seeds and allow them to splutter. This adds a nutty flavor to the oil.

  • Add the fenugreek seeds and sauté until fragrant and lightly browned. Be careful not to burn them, as this can make the dish bitter.

  • Slowly pour the rice flour slurry into the simmering gravy, stirring constantly to prevent lumps. Continue to cook for a few minutes until the gravy reaches your desired consistency.
