Ingredients
Grains & Lentils
- 1/2 cup Lentils arhar dal, split red pigeon peas; also known as toor dal, red
- 1 1/2 cup Basmati Rice long grain rice preferred
Spices & Aromatics
- 1 tsp Salt adjust to taste
- 4 Chilies whole; adjust to your spice preference, dried, red
- 8 clove Garlic minced or finely chopped
- 1 Onion large, finely chopped
- 2 tsp Cumin Seeds jeera
- 1/2 tbsp Turmeric Powder haldi
- 1 tsp Chili Powder kashmiri chili powder for color, or adjust to your spice preference, red

Preparation
- Wash and rinse the red lentils and rice thoroughly. Soak them in water for at least 30 minutes.
Cooking the Khichdi
- Drain the soaked lentils and rice. Combine them in a pressure cooker with 3 cups of water, salt, turmeric powder, and red chili powder. Bring to a boil, then discard any foam that rises to the surface. Reduce heat, cover, and cook for 15-20 minutes, or until the lentils and rice are completely cooked and soft.
Making the Tadka (Tempering)
- Heat ghee in a small pan over medium heat. Add cumin seeds and let them crackle. Add minced garlic and chopped onions and sauté until golden brown. Add the whole dried red chilies and sauté for a few seconds. Remove from heat immediately.
Combining and Serving
- Carefully open the pressure cooker and gently stir in the tadka (tempering). Garnish with fresh cilantro, a lemon wedge, and additional tadka as desired. Serve hot with mango pickle, yogurt, or any other desired accompaniments.
