Ingredients
For the Paneer
- 200 gm Cottage Cheese indian cottage cheese; can be cubed or crumbled
- 1 tbsp Oil vegetable or ghee (clarified butter)
For the Khichdi
- 1 cup Basmati Rice rinse thoroughly before use
- 1 cup Mung Bean split yellow lentils; also known as moong dal, yellow
- 2 tsp Ginger Paste
- 1 tsp Turmeric Powder haldi
- 1 tsp Cumin Seeds jeera
- 1/2 tsp Cumin Powder
- 3 Chillies finely chopped, green
- 1.5 tsp Salt or to taste
- 1 tbsp Lemon Juice
- 3 cup Water adjust as needed for desired consistency
Instructions
Prepare the Paneer
- Shallow fry the paneer cubes in 1 tbsp of oil until lightly browned. Set aside.
Cook the Khichdi
- In the same pan, add the cumin seeds and sauté until fragrant. Add the moong dal and stir continuously until lightly browned and roasted.
- Add the rice, turmeric powder, cumin powder, ginger paste, green chilies, and salt. Stir well to combine.
- Pour in 3 cups of warm water. Bring to a boil, then reduce heat to low, cover, and simmer for approximately 10-12 minutes, or until the rice and dal are cooked through and the water is absorbed.
- Once cooked, gently stir in the lemon juice and the previously fried paneer cubes.
Serve
- Serve the hot Paneer Khichdi immediately.
