Ingredients
Legumes
- 1 cup Kidney Beans rajma, red kidney beans; soak overnight
- 1.5 cup Lentils urad dal, black, whole black lentils; soak overnight

- 2 Onions finely chopped
- 6 Tomatoes medium-sized, pureed
- 1 tbsp Ginger Paste freshly made
- 1 tbsp Garlic Paste freshly made
- 1 tsp Cumin Seeds
- 1 Chili adjust to taste, finely chopped, green
- 1 tsp Turmeric Powder haldi
- 1 tsp Chili Powder adjust to taste, red
- 1 tsp Cumin Powder jeera powder
- 1 tsp Fenugreek Leaves kasuri methi
- 1 tsp Garam Masala
- 1/4 tsp Asafoetida hing
Instructions
Prepare the Lentils
- Soak 1 cup kidney beans and 1.5 cups black lentils in water overnight. Drain and pressure cook with 4 cups of water, 2 tbsp salt, and 1/4 tsp asafoetida for 2 whistles on high heat. Reduce heat and cook for 10 more minutes. Let the pressure release naturally.
Sauté Aromatics
- Heat 6 tbsp ghee in a large pot or kadai over medium heat. Add 1 tsp cumin seeds and 2 finely chopped onions. Sauté until onions are softened and lightly browned.
Build the Flavor Base
- Add 1 tbsp ginger paste and 1 tbsp garlic paste. Cook for 2 minutes, stirring frequently. Add the pureed tomatoes and cook for 10 minutes on low heat, covered, stirring occasionally.
