Preparation
- Wash and peel the potatoes. Cut them into 1-inch pieces.
Sautéing the Potatoes
- Heat the oil in a pressure cooker or a heavy-bottomed pot. Add the fenugreek seeds and let them crackle.
- Add the potatoes and sauté for 1 minute. Stir in the red chili powder and turmeric powder, and sauté for another 5-6 minutes until slightly softened.
Spice Paste
- Grind the mustard seeds, cumin seeds, and garlic cloves into a smooth paste using a mortar and pestle or a food processor.
Simmering the Curry
- Add the spice paste to the pressure cooker and sauté for 1 minute. Add the chopped tomatoes and mix well.
- Pour in 1 cup of water (adjust for desired gravy consistency). Close the lid and pressure cook on medium heat for 1 whistle. After the whistle, simmer on low heat for 5 minutes.
Finishing Touches
- Carefully release the pressure from the cooker. Open the lid and stir in the salt. Mix well and adjust seasoning.
- Garnish with freshly chopped coriander leaves.
