Ingredients

- 10 Curry Leaves
- 1/2 tsp Cumin Seeds
- 1/2 tsp Mustard Seeds

- 1/4 cup Oil vegetable or canola

- 2 tbsp Coriander chopped
Instructions
- Heat the oil in a pressure cooker over medium heat. This ensures even cooking.
- Add the cumin seeds, mustard seeds, and curry leaves to the hot oil. Sauté for about 30 seconds, or until the seeds begin to pop and the curry leaves become fragrant. This process, called tempering, releases the aromatics of the spices.
- Add the chopped garlic and sauté for another minute until lightly golden. Be careful not to burn the garlic, as it can become bitter.
- Add the chopped onion and sauté until softened and translucent, about 5-7 minutes. This builds a flavorful base for the curry.
- Add the salt, red chili powder, and turmeric powder to the onions. Sauté for a minute to toast the spices and enhance their flavor.
- Add the chopped potatoes and green chilies to the pot. Stir well to coat the potatoes with the spice mixture.
- Add 1 cup of water to the pressure cooker. Secure the lid and cook for 3 whistles. Allow the pressure to release naturally. Using a pressure cooker significantly reduces cooking time.
- Once the pressure has released, open the cooker and check the potatoes for doneness. They should be tender and easily mashed.
- Garnish with fresh chopped cilantro. Serve hot with puri, chapati, or rice.
