Ingredients
 

Vegetables

  • 2 Potato medium-sized, peeled and diced
  • 150 gm Eggplant also known as brinjal, diced
  • 1 Onion finely chopped, large
  • 1 Tomato finely chopped, medium-sized

Spices & Seasoning

  • 2 tbsp Oil vegetable or canola oil
  • 1/4 cup Water or as needed

Instructions
 

Prepare the Ingredients

  • Dice the potatoes and eggplant. Finely chop the onion and tomato.

Temper the Spices

  • Heat oil in a pan over medium heat. Add cumin seeds and mustard seeds. Once they start to splutter, add the chopped onions and sauté until softened.

Add Tomatoes and Spices

  • Add the chopped tomatoes and sauté until they become mushy. Stir in turmeric powder, coriander powder, and chili powder. Sauté for about a minute until fragrant.

Cook the Potatoes

  • Add the diced potatoes and cook for about 10 minutes, stirring occasionally, until slightly softened.

Add Eggplant and Simmer

  • Add the diced eggplant, mix well, and add 1/4 cup water. Cover the pan and cook on low heat until the potatoes and eggplant are tender and cooked through (approximately 15-20 minutes). Stir occasionally to prevent sticking.

Season and Serve

  • Season with salt to taste. Serve hot with roti, naan, or rice.
