  • Heat the oil in a deep wok or large skillet over medium-high heat. Add the cumin seeds and let them sizzle for about 30 seconds until fragrant. This blooming process releases their aromatic oils.
  • Add the chopped garlic and green chilies to the wok. Sauté for about 30 seconds until the garlic is lightly golden and fragrant.
  • Add the fenugreek leaves to the wok and stir well to combine with the spices. Cook for about 2 minutes over high heat, stirring frequently, until the leaves wilt slightly.
  • Add the chopped tomatoes to the wok and mix well with the fenugreek leaves. Cook for another 2 minutes over high heat, stirring occasionally.
  • Reduce the heat to low, add salt to taste, and stir well. Cover the wok and let the sabzi simmer gently for about 8-10 minutes, or until the fenugreek leaves and tomatoes are tender and the flavors have melded.
  • The Methi Tamatar Ki Sabzi is now ready. Serve hot with dal, rice, or chapati.
