Instructions

Prepare the Dough

  • Combine all-purpose flour, salt, chaat masala, and ajwain in a large bowl. Gradually add the vegetable oil, mixing with your fingers until the mixture resembles breadcrumbs. Add warm water, a little at a time, until a firm, smooth dough forms. Knead for 2-3 minutes until the dough is pliable and elastic.

Shape the Matar

  • Divide the dough into small, equal portions. Roll each portion into a thin, flat circle using a rolling pin. Use a bottle cap or a small cookie cutter to cut out cashew nut shapes. Repeat with remaining dough.

Air Fry the Matar

  • Preheat your air fryer to 180°C (350°F). Arrange the cashew-shaped matar in a single layer in the air fryer basket, ensuring they are not overcrowded. Air fry for 10-12 minutes, or until they are golden brown and crispy, shaking the basket halfway through for even cooking. Allow the matar to cool completely before serving.

Serve and Enjoy

  • Serve your crispy, air-fried cashew-shaped matar with tea or your favorite beverage. Store leftovers in an airtight container at room temperature for up to 3 days.

Recipe Notes

Expert Tips for Perfect Air-Fried Cashew Matar

  • For extra flavor, add a pinch of red chili powder to the dough.
  • If the dough is too sticky, add a little more flour, one tablespoon at a time.
  • Don't overcrowd the air fryer basket; this will prevent even cooking and result in soggy matar.
  • Experiment with different shapes! Use cookie cutters to create fun and festive designs.
