Ingredients
 

Okra Preparation

  • 500 gm Okra also known as ladyfingers/bhindi. wash thoroughly and pat dry.

Prepare the Okra

  • Wash and thoroughly dry 500g of okra. Cut each okra lengthwise into 4 pieces.

Make the Spice Coating

  • In a mixing bowl, combine 2 tbsp gram flour (besan), 1 tsp coriander powder, 1 tsp chaat masala, 1 tsp red chili powder, 1/2 tsp garam masala, 1 tsp dry mango powder (amchur powder), and salt to taste. Mix well.

Coat and Marinate the Okra

  • Add the dry spice mixture to the okra pieces. Mix gently but thoroughly to coat each piece evenly. Pour in 2 tbsp mustard oil and use your hands to ensure the okra is well coated with the oil and spice mixture. Add 1 tbsp lemon juice. Let it marinate for 10-15 minutes.

Air Fry the Okra

  • Preheat your air fryer to 160°C (320°F). Place half of the marinated okra in the air fryer basket, ensuring they are in a single layer. Air fry for 10 minutes.

Crisp and Serve

  • Gently shake the basket halfway through cooking for even browning. Increase the temperature to 180°C (350°F) and air fry for another 5 minutes, or until the okra is golden brown and crispy. Repeat with the remaining okra. Serve immediately and enjoy!
