Ingredients
 

Vegetables & Grains

  • 500 gm Potato medium-sized, peeled and diced into roughly 1-inch cubes
  • 1 cup Couscous

Prepare the Couscous

  • Soak the couscous in 1/2 cup of water for at least 15 minutes, or as directed on the package.

Sauté the Potatoes

  • Heat the oil in a pan or pot over medium heat. Add the onion seeds and sauté for about 30 seconds until fragrant. Add the diced potatoes, turmeric powder, and salt. Stir well to coat the potatoes with the oil and spices. Cover and cook for 5-7 minutes, stirring occasionally, until the potatoes are slightly softened.

Combine and Simmer

  • Remove the lid, add the green chili paste and coconut paste. Stir well to combine. Add the soaked couscous and stir gently. Cover the pan and cook for another 5-7 minutes, or until the couscous is fluffy and the potatoes are tender. Stir gently once or twice during cooking to prevent sticking.

Serve

  • Serve hot. Aalu Posta is delicious on its own or served as an accompaniment to steamed rice.
