  • Boil 2 medium potatoes until tender (about 4 whistles in a pressure cooker). Peel and cut into bite-sized pieces.

  • Heat 2 tbsp mustard oil in a pan. Add 1 tsp mustard seeds and 1 tsp cumin seeds. Once they splutter, add 1-2 finely chopped green chilies and 10-12 curry leaves.

Sauté the Spices

  • Add 1/2 tsp turmeric powder, 1/2 tsp red chili powder, a pinch of asafoetida, and 1 tsp coriander powder. Stir well for a few seconds until fragrant.

Combine and Cook

  • Add the boiled potato pieces to the pan and mix gently to coat them with the spices. Add 1.5 tsp salt (or to taste). Cover the pan with a lid and cook on low-medium heat for 5-7 minutes, or until the potatoes are well-cooked and heated through.
