Ingredients
For the Potatoes
- 2 medium Potato
Spices & Aromatics
- 1 tsp Cumin seeds
- 1/2 tsp Turmeric powder
- 1/2 tsp Chili Powder adjust to your spice preference, red
- 1 tsp Coriander also known as dhania powder, powder
- 1 pinch Asafoetida hing
- 1-2 Chili finely chopped, green
- 10-12 Curry Leaves
- 2 tbsp Coriander for garnish

- 1.5 tsp Salt or to taste
- 2 tbsp Mustard Oil
- 1 tsp Mustard Seeds
Instructions
Prepare the Potatoes
- Boil 2 medium potatoes until tender (about 4 whistles in a pressure cooker). Peel and cut into bite-sized pieces.
Temper the Spices
- Heat 2 tbsp mustard oil in a pan. Add 1 tsp mustard seeds and 1 tsp cumin seeds. Once they splutter, add 1-2 finely chopped green chilies and 10-12 curry leaves.
Sauté the Spices
- Add 1/2 tsp turmeric powder, 1/2 tsp red chili powder, a pinch of asafoetida, and 1 tsp coriander powder. Stir well for a few seconds until fragrant.
Combine and Cook
- Add the boiled potato pieces to the pan and mix gently to coat them with the spices. Add 1.5 tsp salt (or to taste). Cover the pan with a lid and cook on low-medium heat for 5-7 minutes, or until the potatoes are well-cooked and heated through.
Garnish and Serve
- Turn off the heat and garnish with 2 tbsp fresh coriander leaves. Serve hot with a dollop of plain yogurt or curd.
