On This auspicious occasion of Eid I thought I should again try something which is very healthy yet should be in sync with the occasion so all the richness of dry fruits ,figs and honey brought together in this tea cake which is made with soya flour and Ragi with no artificial sweeteners.

Ingredients
- Soya flour-3/4 cup
- Ragi flour-3/4 cup
- Dried figs-5/6 pieces soaked in warm water and chopped
- Sunflower seeds-1 tblspn
- Almonds-1 tblspn
- Walnuts-1 tblspn
- Jaggery sugar/brown suga/ honey-3/4 cup
- Butter milk -1 cup +3 tblspn
- B.powder-1 tspn
- Vanilla essence
- Cinnamon powder-1 tspn
- Olive oil/ Desi ghee-3 tblspn
- Coco powder-2 tblspn

Instructions
- First of all sieve together all dry ingredients .soak figs in warm water for sometime and chop into small pieces
- Combine all the nuts in a mixer and ground them to a powder
- Now take buttermilk and sugar mix them well and add ghee/oil ,vanilla essence , cinnamon powder and gradually add all the dry ingredients .Whisk it well but do not over whisk .
- To this batter add chopped figs and nuts powder
- To the ready batter add a table spoon of vinegar and pour the batter into greased molds and keep it in the oven
- Bake for about 40 minutes or till the skewer comes out clean in pre heated oven at 190.
Notes
Do not over mix any thing
Butter milk should not be sour
Everything should be at room temperature
