Flattened Rice Khichdi

Health conscious people can consume Flattened rice in their diet to reduce weight as it is very light on the stomach yet is energetic to start a day. Flattened rice khichdi is easily digestible , rich in nutrients , has low gluten-levels. It can be consumed by diabetics too.

Ingredients
  

  • Flattened Rice - 3/4 cup
  • Green gram - 1/4 cup
  • Onion small size - 1
  • Green chillies - 1 or 2
  • Potato small size - 1
  • Carrot small size - 1
  • Tomato small size - 1
  • Cumin seeds - 1 teaspoon
  • Black pepper powder - 1 pinch
  • Curry leaves- 1 tablespoon
  • Asafoetida - 1 pinch
  • Water - as required to rinse the flattened rice
  • Salt
  • Ghee/clarified butter - 2 table spoons
  • Turmeric powder - 2 pinches

Instructions
 

  • Soak green gram in a bowl for 20 minutes.
  • In the meanwhile, heat oil in a pan.
  • Add cumin seeds , sliced onion . Once the onion slices turn light brown in color , add the finely chopped vegetables, curry leaves, asafoetida , salt and turmeric powder
  • Sprinkle little amount of water.Cover it with a lid to allow the vegetables to cook.
  • Once the vegetables turn soft , transfer the soaked green gram to the above tempering mix.
  • Allow it to boil for 2 minutes or until they turn tender. In the meantime, rinse the flattened rice in sufficient amount of water in a colander or a strainer until it gets softened.
  • Now add this rinsed flattened rice to the above cooking mixture. Mix it well in all the directions.
  • Then sprinkle blackpepper powder. Saute it well. Finally , drizzle ghee over it and cover with a lid.
  • Before serving garnish with coriander leaves. Transfer it into a serving plate.
  • Serve hot.
