Veg Potato Fish Fry Masala | Sindhi Style

Since school times I always loved my Sindhi friend's lunch box with mouthwatering masaledar sabji fries, super soft fragrant parathas and tangy pickles. And also we used to live in a Sindhi colony, so I have a strong Sindhi food connection.
My kids love it when I make Sindhi Aloo-Bhindi or this Veg Potato Fish Fry Masala (by the way; my son named it so, he loves fish fry, and these aloo look similar to those,, 😉)
One of my neighbour, 'Sanjana Prythyani' has come up with this cool looking idea, by slicing the potatoes with apple cutter and stuffing masalas in gaps and then stir frying them.
Which everyone in my family loves and I make these often, sometimes with gravy or sometimes dry.

- Wash and peel potatoes. Slice them in three length wise.
- Using a apple cutter, give a deep cut to all the slices. Carefully not cutting till end. We need a cut for filling masalas.
- Heat oil in a non stick pan. Add these potatoes into the pan. Be careful not to overlap as they will break while cooking.
- Cook from both sides till golden colour. Cover and cook.
- Keep checking and flipping the potatoes. Till soft when knife inserted in centre.
- Once potatoes are soft add the remaining Masala if any, and let it also get cooked a little.
- Now the 'Veg Potato Fish Fry Masala in Sindhi Style' is ready to serve. Garnish with sliced tomatoes or coriander leaves. Enjoy these with paratha and pickle or with hot Dal-Rice and papad.
