Instructions

Prepare the Dough

  • Combine all-purpose flour, baking powder, baking soda, and salt in a large bowl. Gradually add yogurt, oil, and water, mixing until a soft, pliable dough forms. Knead the dough for 5-7 minutes until smooth and elastic.

First Rise

  • Place the dough in a lightly oiled bowl, cover with plastic wrap, and let it rise in a warm place for at least 1-2 hours, or until doubled in size.

Shape and Cook

  • Divide the risen dough into 6-8 equal portions. Roll each portion into a 4-5 inch diameter circle. Heat a lightly oiled griddle or flat pan over medium heat.

Cook the Kulchas

  • Place a rolled kulcha on the hot griddle. Cook for 1-2 minutes per side, or until lightly browned. Apply a little water to the top, sprinkle with chopped coriander and nigella seeds. Cover the pan and cook for another 2-3 minutes, or until the kulcha is puffed up and cooked through. Repeat with remaining kulchas.

Serve

  • Serve the warm Kulchas with melted butter on top. Enjoy!

Recipe Notes

Expert Tips for Perfect Kulchas

  • For extra soft Kulchas, use full-fat yogurt.
  • Don't over knead the dough, as this can result in tough Kulchas.
  • Adjust the cooking time depending on your stovetop heat; you want a golden brown color.
  • Experiment with different seasonings! Add finely chopped onions, garlic, or chilies to the dough for a flavorful twist.
