Ingredients
Dry Ingredients
- 2 cup All-Purpose Flour also known as refined flour
- 1 tsp Baking Powder
- 1/2 tsp Baking Soda
- 1 tsp Salt or to taste
Wet Ingredients
- 1/4 cup Yogurt
- 2 tbsp Vegetable Oil
- 1/2 cup Water add more if needed to achieve desired dough consistency
Garnish
- 2 tbsp Coriander chopped
- 1 tsp Nigella Seeds also known as kalonji
- 2 tbsp Butter for serving
Instructions
Prepare the Dough
- Combine all-purpose flour, baking powder, baking soda, and salt in a large bowl. Gradually add yogurt, oil, and water, mixing until a soft, pliable dough forms. Knead the dough for 5-7 minutes until smooth and elastic.
First Rise
- Place the dough in a lightly oiled bowl, cover with plastic wrap, and let it rise in a warm place for at least 1-2 hours, or until doubled in size.
Shape and Cook
- Divide the risen dough into 6-8 equal portions. Roll each portion into a 4-5 inch diameter circle. Heat a lightly oiled griddle or flat pan over medium heat.
Cook the Kulchas
- Place a rolled kulcha on the hot griddle. Cook for 1-2 minutes per side, or until lightly browned. Apply a little water to the top, sprinkle with chopped coriander and nigella seeds. Cover the pan and cook for another 2-3 minutes, or until the kulcha is puffed up and cooked through. Repeat with remaining kulchas.
