Ingredients

Filling
Topping & Garnish
- 2 tbsp Butter
- 1-2 tbsp Sesame Seeds roasted
- 2-3 Chilies green, smoked
Instructions
- In a pan over medium heat, melt the butter. Add the minced garlic, minced ginger, and chopped mushrooms. Sauté for a few minutes until the mushrooms soften.
- Add the grated beetroot and sauté for another few minutes until slightly tender. This helps to release the sweetness of the beets.
- Stir in the grated cheese, salt, and mixed herbs. Continue to cook until the cheese is melted and the mixture is well combined.
- Lightly toast the slices of whole wheat bread. This adds a nice crunch and prevents the toast from becoming soggy.
- Spread the cheesy beet and mushroom mixture generously over the toasted bread slices. Top with another slice of bread to create a sandwich.
- Lightly butter the outside of the sandwiches and toast them in a pan or panini press until golden brown and the cheese is melted and gooey.
- Sprinkle with roasted sesame seeds and smoked green chilies for added flavor and visual appeal.
