For the Mushroom Filling

  • 8 oz Mushrooms button, or a mix are ideal, sliced; cremini
  • 2 clove Garlic minced
  • 1 tsp Chili finely chopped, green, or to taste
  • 1/2 tsp Pepper black, freshly ground
  • 1 tbsp Lemon Juice
  • 1 tsp Oregano dried flakes
  • 2 tbsp Butter unsalted

For the White Sauce

For Assembly

  • 8 slices Bread such as sourdough or country loaf, thick-cut bread
  • 1/4 cup Parmesan Cheese for topping, grated, optional

Instructions
 

Prepare the Mushroom Filling

  • Sauté minced garlic in 1 tbsp butter until fragrant. Add sliced mushrooms and cook until softened, about 5-7 minutes. Stir in green chili, oregano, salt, pepper, and lemon juice. Cook for another minute.

Make the White Sauce

  • In a separate saucepan, melt remaining 1 tbsp butter. Whisk in the flour and cook for 1-2 minutes, stirring constantly. Gradually whisk in the milk until smooth and thickened. Season with salt.

Combine and Assemble

  • Stir the mushroom mixture into the white sauce. Spread the mixture evenly onto bread slices. If using, sprinkle with Parmesan cheese.
