Prepare the Seeds and Nuts

  • Toast the melon seeds (and walnuts, if using) in a dry skillet over medium heat for 2-3 minutes, or until fragrant and lightly browned. Set aside to cool.

Prepare the Vegetables

  • Thinly slice the red cabbage. Chop the tomato and red onion. Thinly slice the cucumber.

Combine and Serve

  • In a large bowl, combine the red cabbage, tomato, cucumber, and red onion. Add the toasted melon seeds and walnuts (if using).

Make the Dressing

  • In a small bowl, whisk together the lime juice, olive oil, and salt. Pour the dressing over the salad and toss gently to combine.
