  • Peel the garlic cloves. To peel garlic quickly, soak the cloves in hot water first. Oil your hands before peeling to avoid lingering garlic aroma. Heat 1 tsp of oil in a pan. Add the garlic cloves and roast until light brown. This brings out their nutty flavor. Remove the garlic and set aside.

  • Add the red chilies to the same pan and roast until deep red, enhancing their smokiness. Remove and set aside. Then, add the grated coconut and roast over low heat until dry, toasting it for a richer flavor.
  • In a mixer, combine the roasted garlic, red chilies, and coconut. Add the tamarind, ginger, asafoetida, and salt. Grind with a little water until a smooth paste forms.
  • Heat the remaining 1 tsp of oil in the pan. Add the mustard seeds and let them splutter. This releases their characteristic pungent aroma. Add the curry leaves and sauté briefly. Pour this tempering over the chutney and mix well.
