Ingredients

- 2 cup Chicken Broth or vegetable broth
Noodles & Vegetables
- 200 gm Spaghetti

- 1 Carrot chopped, medium
- 1 English Cucumber thinly sliced
- 1 Spring Onion chopped

- 1/2 tsp Salt or to taste
- 1/2 tsp Pepper black
- 1/2 tsp Lemon Zest
Instructions
- Hard-boil the eggs for 10 minutes. Once cooked, plunge them into ice water to stop the cooking process and make peeling easier. Peel and thinly slice the eggs.
- While the eggs cook, prepare the vegetables. Thinly slice the cucumber, red cabbage, and spring onion. Chop the carrot.
- Cook the spaghetti according to package directions until al dente. This ensures the noodles have a pleasant bite. Drain the pasta and rinse under cold water to prevent sticking.
- In a saucepan, bring the chicken or vegetable broth to a simmer. Add the lemon zest and chopped spring onion to infuse the broth with flavor.
