Prepare the Beetroot

  • Peel and finely chop 1 medium beetroot (approximately 150-200g). Grind the chopped beetroot into a smooth paste using a food processor or blender.

Make the Dough

  • In a large mixing bowl, combine 1 cup of multigrain flour and 1.5 tsp salt. Add the beetroot paste and 1-2 tbsp of water gradually, mixing until a soft, pliable dough forms. Knead the dough for 5-7 minutes until smooth and elastic.

Rest the Dough

  • Cover the dough with a damp cloth and let it rest for at least 15-20 minutes. This allows the gluten to relax, resulting in softer poories.

Roll and Fry the Poories

  • Heat 2-3 cups of vegetable oil in a large, heavy-bottomed pan or wok over medium heat. Pinch a small, lemon-sized portion of the dough and roll it into a thin, round circle using a rolling pin.
  • Carefully place the rolled poori into the hot oil. Fry for about 1-2 minutes on each side, or until golden brown and puffed up. Remove from oil and drain on paper towels.
