Ingredients
For the Spiced Rice
- 1 cup Basmati Rice soaked for 20 minutes
- 1 cup Peas fresh or frozen, green
- 2 tsp Oil vegetable or canola
- 2 leaves Bay Leaves
- 1 tsp Ginger Paste
- 1 tsp Turmeric Powder
- 1 tsp Chili Powder
- 1 ½ tsp Salt or to taste
- 2 tbsp Ghee
- 1 tsp Garam Masala
For the Stuffed Baby Eggplants
- 4 Eggplant small
- 1 tsp Panch Phoron
- 2 Chillies green, slit lengthwise
- ½ tsp Salt or to taste
- 2 tbsp Oil for shallow frying
For the Sweet Tomato Chutney
- 2 medium Tomatoes roughly chopped
- ¼ cup Sugar
- ½ tsp Ginger Paste
- ½ tsp Chili Powder
- ½ tsp Salt or to taste
For the Mixed Vegetables
- 1 cup Vegetables and eggplant (cubed), bell peppers, carrots, mixed, potatoes, such as green beans
For Serving
- 1 cup Yogurt
Instructions
- Wash the soaked rice under cold water until the water runs clear. This removes excess starch and helps achieve fluffy rice. In a deep pan or pot, heat the oil over medium heat. Add the bay leaves and sauté for a few seconds until fragrant.
- Add the rice, green peas, salt, ginger paste, turmeric powder, and chili powder to the pan. Sauté for 2-3 minutes, stirring constantly, until the spices are fragrant and the rice is lightly toasted.
- Pour 1 ½ cups of warm water into the pan. Bring the mixture to a boil, then reduce the heat to low, cover the pan tightly, and simmer for 15-18 minutes, or until the rice is cooked through and the water is absorbed.
- Once the rice is cooked, gently fluff it with a fork. Stir in the ghee and garam masala for added flavor and aroma. Set aside.
- Wash the baby eggplants and make a slit lengthwise in each one, being careful not to cut all the way through. In a small bowl, combine the panch phoron, salt, and slit green chilies.
- Stuff each eggplant with the spice mixture. Heat the oil in a pan over medium heat. Shallow fry the stuffed eggplants, turning occasionally, until they are tender and golden brown on all sides.
- In a separate pan, heat a little oil and sauté the mixed vegetables until they are tender-crisp. Season with salt and any desired spices.
- In a saucepan, combine the chopped tomatoes, sugar, ginger paste, chili powder, and salt. Cook over medium heat, stirring occasionally, until the tomatoes soften and release their juices.
- Continue cooking, stirring frequently, until the chutney thickens to a jam-like consistency. This will take about 15-20 minutes. The chutney should be sweet, tangy, and slightly spicy.
- Arrange the spiced rice, stuffed baby eggplants, mixed vegetables, sweet tomato chutney, and yogurt on a large platter or individual thalis. Serve immediately and enjoy this festive feast.
