Ingredients
For the Bhaji
- 4 medium Potatoes peeled and quartered
- 1 cup Cabbage chopped
- 1 cup Carrots chopped
- 1/2 cup Peas fresh or frozen, green
- 1 cup Bell Peppers capsicum, chopped
- 2 medium Tomatoes chopped
- 1 cup Onion chopped
- 1 tsp Ginger-Garlic Paste
- 2 tbsp Pav Bhaji Masala
- 1/2 tsp Chili Powder or to taste, red
- 1 tsp Salt or to taste
- 4 tbsp Oil vegetable or canola
- 2 tbsp Butter for the bhaji
- 2 tbsp Coriander chopped
For the Pav
- 6 Pav Bread Rolls
- 2 tbsp Butter for the pav
Instructions
- In a large pot, combine the potatoes, cabbage, carrots, green peas, bell pepper, and salt. Add enough water to cover the vegetables by about 2 inches.
- Bring the water to a boil, then reduce heat and simmer for 15-20 minutes, or until the vegetables are fork-tender.
- While the vegetables are cooking, heat the oil in a large skillet or pan over medium heat.
- Add the chopped onion and sauté until softened and translucent, about 5-7 minutes.
- Add the ginger-garlic paste and sauté for another minute until fragrant. This releases the aromatic compounds.
- Add the chopped tomatoes and cook until they break down and form a paste, about 5-7 minutes.
- Stir in the pav bhaji masala and red chili powder. Cook for a minute to toast the spices, enhancing their flavor.
- Drain the cooked vegetables and coarsely mash them using a potato masher or the back of a fork. Leave some texture for a heartier bhaji.
- Add the mashed vegetables to the skillet with the spice paste. Mix well to combine.
- Add a little water to adjust the consistency of the bhaji. Simmer for another 5 minutes to allow the flavors to meld.
- Stir in the butter and chopped cilantro. This adds richness and freshness to the bhaji.
- To prepare the pav, slice each roll in half horizontally.
- Heat a griddle or tawa over medium heat. Spread butter on both sides of each pav half and toast until golden brown and slightly crispy.
- Serve the hot bhaji with the toasted pav, chopped red onion, and lemon wedges.
