Preparing the Cutlet Mixture

  • Rinse the poha briefly under water until softened, then drain well and let it sit for a few minutes to soften further.
  • Mix the softened poha with mashed potato, carrot, peas, coriander leaves, green chilli, chaat masala and salt in a bowl until well combined.

Shaping and Cooking

  • Divide the mixture into small portions and shape into flat, round cutlets.
  • Heat oil in a pan on medium heat. Place the cutlets in the pan and cook for 3 to 4 minutes on each side until golden and crisp. Repeat for all cutlets.

Preparing the Curd Dip

  • Whisk the curd with salt and roasted cumin powder, if using, until smooth.

Packing

  • Let the cutlets cool slightly and pack them in the tiffin box with the curd dip in a separate small container and fruit on the side.

Tiffin Pairing

The curd dip adds a cooling, tangy contrast to the crisp, savoury cutlets.

Make-Ahead Tip

Boil and mash the potato the night before, and mix the entire cutlet mixture in advance - shape and cook fresh in the morning for the best texture.

Quick Swap

Leave out the green chilli entirely for a very mild version. A tablespoon of grated paneer added to the mixture gives extra protein if you like.

Allergen Note

Contains dairy if the curd dip is included - this can be packed separately or left out.

Spice Note

Green chilli and chaat masala are both optional - the cutlets are mild and tasty even without them.

Packing Tip

Let the cutlets cool for a few minutes before packing so they firm up slightly and hold their shape better in the tiffin box.
