Instructions
Preparing the Cutlet Mixture
- Rinse the poha briefly under water until softened, then drain well and let it sit for a few minutes to soften further.

Shaping and Cooking

Packing
- Let the cutlets cool slightly and pack them in the tiffin box with the curd dip in a separate small container and fruit on the side.
Recipe Notes
Tiffin Pairing
The curd dip adds a cooling, tangy contrast to the crisp, savoury cutlets.Make-Ahead Tip
Boil and mash the potato the night before, and mix the entire cutlet mixture in advance - shape and cook fresh in the morning for the best texture.Quick Swap
Leave out the green chilli entirely for a very mild version. A tablespoon of grated paneer added to the mixture gives extra protein if you like.Allergen Note
Contains dairy if the curd dip is included - this can be packed separately or left out.Spice Note
Green chilli and chaat masala are both optional - the cutlets are mild and tasty even without them.Packing Tip
Let the cutlets cool for a few minutes before packing so they firm up slightly and hold their shape better in the tiffin box.Recipe Nutrition
