  • In a large pan or skillet, heat the vegetable oil over medium heat. Add the chopped onions and sauté until translucent, about 5 minutes. This builds a flavor base for the dish.

  • Add the minced ginger, garlic, and slit green chilies. Sauté for another 2 minutes until fragrant.
  • Stir in the cumin seeds and chopped tomatoes. Cook for 5-7 minutes, until the tomatoes soften and release their juices.
  • Remove the mixture from the heat and let it cool slightly. Then, transfer to a blender or food processor and blend into a smooth paste.

  • For an extra layer of richness, stir in a tablespoon of butter (optional). Garnish with freshly chopped cilantro (or culantro, if available).
