In a food processor or blender, combine mint leaves, coriander, rosemary, parsley, garlic, and green chili. Blend until finely chopped, adding olive oil to create a smooth paste.

Prepare the Lamb Chops

  • Generously rub the spice mix onto all sides of the lamb chops. Spread the green goddess pesto evenly over the spiced lamb chops.

Sear and Braise the Lamb

  • Heat olive oil in a large cast-iron skillet over medium-high heat. Sear the lamb chops on all sides until nicely browned. Remove lamb chops from the skillet.

Create the Sauce

  • Add the sliced shallots to the skillet and sauté until translucent. Add the white wine and bay leaf, and bring to a simmer, cooking until the liquid reduces slightly (about 4 minutes).

Braising and Finishing

  • Stir in the broth and lemon juice. Return the lamb chops to the skillet. Bring to a simmer, then cover the skillet and transfer to the preheated oven.

Oven Braising

  • Braised for 2-2.5 hours, or until the lamb is extremely tender. Flip the lamb chops halfway through. Uncover the skillet during the last 10 minutes of cooking to allow the sauce to thicken.

Rest and Serve

  • Remove the lamb chops from the oven and let them rest for 10 minutes before serving. Garnish with fresh parsley and crushed mint. Serve hot with the flavorful white wine sauce.
