Ingredients
Spices
- 2 tsp Mustard Seeds black
- 1 tsp Salt kala namak, black
- 1 tsp Chili Powder lal mirch, red
- 1 pinch Asafoetida hing
Instructions
- In a clean container, combine the black mustard seeds, black salt, red chili powder, asafoetida, and salt.
- Pour the water into the container. Stir well to ensure all the spices are thoroughly mixed with the water.
- Close the container with a tight-fitting lid. Place the container in a cool, dark place for 3 days to ferment. Stir the mixture once a day with a clean, dry spoon. This daily stirring helps distribute the spices and encourages even fermentation.
- The Kanji will develop its characteristic tangy, spicy flavor over the fermentation period. It tastes best on the fourth day when the spices have fully infused the water.
- Pour the Kanji into glasses. Garnish with fresh mint leaves for an extra touch of freshness and aroma. Serve chilled and enjoy!
