Ingredients

- 2-3 Curry Leaves
- 1-2 Chillies green
- 1/2 cup Cranberries fresh or frozen
Spices and Flavorings
- 1-2 tsp Salt or to taste
- 1/2 tsp Cumin Seeds
- 1/2 tsp Cumin ground
- 1/2 tsp Turmeric Powder
- 1/2 tsp Coriander ground
- 1/2 tsp Chili Powder
Oil
- 1 tbsp Mustard Oil
Instructions
- Peel and chop the potatoes into bite-sized pieces. This ensures even cooking.
- Heat the mustard oil in a pan over medium heat. Add the cumin seeds and curry leaves. Sauté until the cumin seeds crackle and become fragrant. This blooming process releases the spices' aromas.
- Add the chopped potatoes and green chilies to the pan. Stir well to coat the potatoes with the spiced oil.
- Add the turmeric powder, ground cumin, ground coriander, and chili powder. Stir to combine and cook for a minute, allowing the spices to toast lightly.
- Add a splash of water (about 1/4 cup) to the pan. This creates steam and helps the potatoes cook through evenly. Cover the pan and cook until the potatoes are tender, about 8-10 minutes.
- Add the cranberries to the pan. Stir gently to combine. Continue cooking, covered, for another 3-5 minutes, or until the cranberries have softened slightly.
- Season with salt to taste. Give the sauté a final stir. Serve hot with steamed rice, chapati, paratha, kulcha, naan, or any other Indian bread.
