Ingredients
Spices and Seasoning
- 2 sprigs Curry Leaves
- 1 tsp Turmeric Powder
- 2 tsp Chili Powder red
- Salt to taste
Instructions
- Peel the potatoes and place them whole in a pressure cooker. Pressure cook for 3 whistles. Allow the pressure to release naturally. Once cool enough to handle, cut the potatoes into large pieces.
- Heat the oil in a large skillet or kadai over medium heat. Add the curry leaves and sauté for a few seconds until fragrant. Add the cooked potato pieces, salt, and turmeric powder to the skillet.
- Mix well to coat the potatoes with the spices. Reduce the heat to low and roast for 5-10 minutes, stirring frequently to prevent sticking and ensure even browning. This gentle roasting helps develop deep flavors.
- Add the red chili powder, mix well, and continue to roast for another 10-15 minutes, stirring frequently. The potatoes should be nicely browned and crisp on all sides.
- Remove the potato roast from the heat and serve hot. Enjoy!
