Instructions

  • In a bowl, combine the chicken wings, ginger-garlic paste, ground cumin, ground coriander, chili powder, salt, Greek yogurt, soy sauce, and lime juice. Mix well to ensure the chicken is evenly coated. Cover and refrigerate for at least 1 hour, or preferably longer, for maximum flavor.
  • In a separate bowl, whisk together the egg and cornstarch to create a smooth batter. Heat vegetable oil in a large pot or deep fryer to 350°F (175°C). Dip each marinated chicken wing into the batter, ensuring it's fully coated. Carefully place the battered wings into the hot oil, working in batches to avoid overcrowding. Fry for 8-10 minutes, or until golden brown and cooked through. Remove the wings from the oil and place them on a wire rack to drain excess oil. This allows the chicken to crisp up.
  • In a wok or large skillet, heat the vegetable oil over medium heat. Add the minced garlic and sauté until fragrant and lightly golden, being careful not to burn it. Add the chopped cilantro and sauté for another minute until wilted.
  • Add the soy sauce, chili-garlic sauce, sweet chili sauce, and brown sugar to the wok. Stir well to combine. Cook for 2-3 minutes, allowing the sauce to thicken slightly.
  • Add the fried chicken wings to the wok with the sauce. Toss gently to coat the wings evenly. Continue to cook for another minute or two to ensure the wings are heated through and well coated in the sauce.
  • Garnish with toasted sesame seeds and serve the Sweet & Spicy Chicken Wings immediately while hot. Enjoy!

Recipe Notes

Good To Know

  • For extra-crispy skin, pat the chicken wings completely dry before marinating and let them air-dry on a rack in the refrigerator for 1-2 hours after marinating.
  • To intensify the tangy flavor, reserve a tablespoon of the marinade and mix it with an extra splash of lime juice to brush over the wings right after baking or frying.
  • If you prefer a smoky finish, grill the wings for the last 2-3 minutes of cooking.
  • For a dairy-free variation, substitute the hung curd with silken tofu purée or unsweetened coconut yogurt.

Expert Tips

  • Don't overcrowd the pan when baking or frying the wings to ensure even cooking and crispiness.
  • For a spicier kick, add a pinch of cayenne pepper or a few drops of your favorite hot sauce to the marinade.
  • Serve the wings with a side of fresh vegetables and dipping sauce of your choice, such as ranch, blue cheese, or aioli.

Storage Instructions

  • Store leftover chicken wings in an airtight container in the refrigerator for up to 3 days.
  • Reheat in a preheated oven at 350°F (175°C) for 10-15 minutes, or until heated through.
