Slice the almonds and cashews. In a thick-bottomed pan, heat 2 tablespoons of ghee over medium heat. Add the almonds, cashews, and dry coconut. Sauté until golden brown and fragrant. This toasting process enhances their nutty flavor and adds a delightful crunch. Remove from the pan and set aside.

  • In the same pan, add 1 tablespoon of ghee. Heat over low heat. Add the fennel seeds and let them splutter for about 10 seconds. This releases their aromatic oils. Add the jaggery, sugar, black currants, and water to the pan. Bring the mixture to a boil, stirring occasionally to dissolve the jaggery and sugar.

  • Once the jaggery and sugar have melted, add the salt and the soaked basmati rice to the pan. Stir in the saffron-infused milk. Increase the heat to high and bring the mixture to a rolling boil. Cook until the rice is almost done, about 20-25 minutes. Cooking time may vary depending on the type and age of your rice. Look for the rice to be mostly tender but still have a slight bite.
