Ingredients
Dry Ingredients
- 1 cup All-Purpose Flour also known as refined flour or maida
- 1 tbsp Semolina also known as sooji or rava
- 1 tbsp Desiccated Coconut
- 1/2 tsp Cardamom Powder elaichi
- 1/2 tsp Baking Powder
Wet Ingredients
- 1 cup Sugar
- 2 tbsp Ghee clarified butter
- 1.5 strands Saffron Strands or 1/4 teaspoon saffron dissolved in 1/4 cup warm water
- 1/2 cup Water
Other
- Oil as needed, for frying
Instructions
Prepare the Sugar Syrup
- Dissolve 1 cup of sugar in 1/2 cup of water to create a sugar syrup. Set aside.
Combine Dry Ingredients
- In a large bowl, combine 1 cup all-purpose flour, 1 tbsp semolina, 1 tbsp desiccated coconut, 1/2 tsp baking powder, and 1/2 tsp cardamom powder. Add 2 tbsp desi ghee and 1.5 strands of saffron (or saffron dissolved in water). Rub the mixture with your fingertips until it resembles coarse crumbs.
Knead the Dough
- Pour the prepared sugar syrup into the dry ingredient mixture. Knead to form a soft, pliable dough. The dough should not be sticky.
Roll and Cut the Dough
- On a lightly floured surface, roll out the dough to about 1/4 inch thickness.
- Use cookie cutters to cut the dough into your desired shapes. Alternatively, you can cut it into squares or diamonds using a knife.
Fry the Munchies
- Heat oil in a pan over medium heat. Carefully place the cut dough pieces into the hot oil, ensuring not to overcrowd the pan. Fry until golden brown and crispy, turning occasionally. Be careful not to overheat the oil, or the munchies will brown on the outside but remain uncooked inside.
