Ingredients
Dry Ingredients
- 2 cup All-Purpose Flour also known as maida
- 2 tsp Baking Powder
- 1/2 tsp Cinnamon ground
- 1/4 cup Coconut grated, shredded
Wet Ingredients
- 1/4 cup Nutiva Virgin Coconut Oil melted, organic
- 3/4 cup Milk
- 1/2 cup Sugar also known as castor sugar, granulated
- 1/4 tsp Salt
Optional Garnish
- 15 Cherries maraschino cherries, halved
Instructions
Preheat & Prep
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
Combine Dry Ingredients
- In a large bowl, whisk together the all-purpose flour, baking powder, cinnamon, shredded coconut, and salt.
Combine Wet & Dry
- Add the melted coconut oil and sugar to the dry ingredients. Mix until just combined. Gradually pour in the milk, mixing until a soft dough forms. Do not overmix.
Shape & Bake
- Turn the dough out onto a lightly floured surface. Roll it out to about 1/2 inch thickness. Use a cookie cutter to cut out cookies. Place a cherry half on top of each cookie, if desired.
- Transfer the cookies to the prepared baking sheet.
- Bake for 12-15 minutes, or until golden brown.
Cool & Serve
- Remove from oven and let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely. Enjoy!
