Coconut Mixture

  • 2 cup Coconut grated, fresh
  • 1 1/2 cup Milk full-fat recommended for richer flavor
  • 3/4 cup Sugar granulated sugar; adjust to your sweetness preference. jaggery can be substituted for a richer, caramel-like flavor.

Instructions
 

Preparing the Coconut Mixture

  • Combine 2 cups of grated fresh coconut and 1 1/2 cups of milk in a large, heavy-bottomed pan (kadai).
  • Stir well to ensure the coconut is thoroughly moistened.

Adding Sweetener and Cooking

  • Add 3/4 cup of sugar (or jaggery). Stir continuously over low heat.
  • Continue stirring as the sugar melts and the mixture becomes slightly watery.
  • Reduce heat to low and continue stirring patiently. The mixture will gradually thicken as the milk evaporates (approximately 20 minutes).
  • The mixture is ready when it becomes crumbly and pulls away from the sides of the pan.

Cooling and Adding Flavor

  • Remove from heat and let the mixture cool for about 10 minutes, or until slightly cool to the touch.
  • Stir in 2 tablespoons of chopped cashews and 1/4 teaspoon of cardamom powder (if using).
  • Mix thoroughly to combine.

Shaping the Laddu

  • Once the mixture is cool enough to handle, use your hands to gently roll it into small, round balls (laddu).

Serving and Storage

  • Serve the Fresh Coconut Laddu immediately or store them in an airtight container at room temperature for up to a week.
