Prepare the Mangoes

  • Cut the raw mangoes into 1-inch pieces.

Temper the Spices

  • Heat mustard oil in a kadai (wok or deep pan). Add mustard seeds, fenugreek seeds, and fennel seeds. Once the seeds splutter, add asafoetida.

Cook the Mangoes

  • Add the chopped raw mangoes, turmeric powder, red chili powder, and salt. Stir well to coat the mangoes with spices. Add 2 cups of water, cover the kadai, and cook for 15-20 minutes, or until the mangoes are soft and tender. Stir occasionally to prevent sticking.

Add Jaggery and Simmer

  • Add the grated jaggery and cook for another 15-20 minutes, or until the gravy thickens to your desired consistency. Stir frequently to prevent burning.

Adjust and Serve

  • Adjust the consistency of the gravy by adding a little more water if needed. Taste and adjust the seasoning as necessary. Your Aam ki Launji is ready! Serve warm or at room temperature with roti, rice, or other Indian dishes.
