Prepare the Dates
- Soak 500g pitted dry dates in 250ml of milk for at least 8-10 hours, or overnight. Drain the dates, reserving the soaking milk.
Grind the Dates
- Remove the pits from the soaked dates and coarsely grind them using a food processor or blender.
Fry the Nuts
- Heat 1 tbsp of ghee in a pan over medium heat. Add the chopped cashews, almonds, pistachios, and chestnuts. Fry until lightly golden brown. Set aside.
Cook the Halwa
- In the same pan, heat 1/2 cup ghee. Add the ground dates and cook, stirring continuously, until the mixture turns a light golden brown. This will take about 10-15 minutes.
Combine and Finish
- Add the reserved date-soaking milk to the pan. Stir well and cook for another 5 minutes. Stir in the fried nuts, honey, and cardamom powder. Mix thoroughly.
Serve
- Cook for another 2-3 minutes. Remove from heat. Garnish with rose petals and extra chopped nuts. Serve hot or cold.
