Ingredients
 

Vegetables & Fruit

  • 2 Apple golden delicious recommended
  • 1 cup Vegetables peas, carrots, green beans, mixed, or your preferred combination

Spices & Seasoning

Other Ingredients

  • 1 tsp Sugar granulated sugar or jaggery for a deeper flavor
  • 1 tbsp Oil vegetable oil or ghee
  • 1/4 cup Water

Instructions
 

Prepare the Apples

  • Peel and core the apples. Cut them into circular slices about 1/4 inch thick. Set aside.

Sauté the Spices

  • Heat oil in a non-stick pan over medium heat. Add mustard seeds, cumin seeds, coriander seeds, and fenugreek seeds. Sauté until the seeds begin to splutter.

Cook the Apples and Vegetables

  • Add the apple slices and mixed vegetables to the pan. Stir in the red chili, turmeric powder, and salt. Sauté for 5 minutes, stirring occasionally.

Simmer and Finish

  • Stir in the sugar and water. Bring to a gentle simmer, cover the pan, and cook for another 5-7 minutes, or until the apples are tender. Taste and adjust seasoning as needed.

Serve

  • Serve the Khatta Mitha Apple Vegetable Curry warm. It can be enjoyed as a light lunch, a side dish, or with rice or roti.
