Ingredients
For the Boondi
- 1/2 cup Boondi ready-made, store-bought boondi
For the Yogurt Mixture
- 1 cup Yogurt full-fat yogurt is recommended, plain
- 1 tbsp Gram Flour also known as besan
- 1 tsp Chili Powder adjust to your spice preference, red
- 1/4 tsp Turmeric
- 1/2 tsp Mango Powder also known as amchur powder, dry
- 1/2 tsp Coriander
- 1 1/2 cup Water
- 1-2 tsp Salt to taste
For the Tempering
- 1 tbsp Oil vegetable or canola oil
- 1 pinch Asafoetida also known as hing
- 2 Chilies broken into halves, dried, red, whole
- 1 stick Cinnamon
- 1/3 tsp Mustard Seeds
- 1/3 tsp Cumin Seeds
- 1/3 tsp Fenugreek Seeds
Instructions
Prepare the Yogurt Mixture
- Whisk together the yogurt, gram flour, red chili powder, turmeric powder, dry mango powder, coriander powder, salt, and 1 1/2 cups of water until smooth and lump-free. Set aside.
Temper the Spices
- Heat the oil in a kadhai (wok or frying pan). Add the asafoetida, dried red chilies, cinnamon, mustard seeds, cumin seeds, and fenugreek seeds. Sauté until the seeds splutter and the spices become fragrant.
Combine and Simmer
- Reduce the heat to low and gently pour in the yogurt mixture. Stir continuously until the mixture slightly thickens. This will take about 5-7 minutes.
Add Boondi and Serve
- Add the boondi to the curry and stir well to combine. Turn off the heat. Let it sit for a couple of minutes to allow the flavors to meld.
- Serve hot with rice, roti, or paratha. Enjoy!
