- 1/2 tsp Salt a pinch of salt enhances the sweetness.

Instructions
Prepare the Amla
- Steam the gooseberries until soft (about 10-15 minutes). Once cool enough to handle, carefully remove the seeds and cut into small, roughly equal-sized pieces.
Sugar Coating and Drying
- In a bowl, combine the amla pieces with granulated sugar and a pinch of salt. Gently toss to coat evenly. Cover the bowl and let it sit at room temperature for 2-3 days, or until the gooseberries release their moisture.
Draining and Drying
- After 2-3 days, carefully strain the mixture to separate the amla pieces from the released juice. Save the juice – it's packed with nutrients and can be consumed as a healthy drink.
- Spread the amla pieces in a single layer on a perforated tray or baking sheet lined with parchment paper. Sun-dry for several hours, or until the pieces are slightly pliable but not completely hard. Avoid direct intense sunlight to prevent burning.
Final Sugar Coating and Storage
- Once partially dried, gently toss the amla pieces in a little more granulated sugar to coat them completely. If using, sprinkle with chaat masala at this stage.
