  • In a mixing bowl, combine the all-purpose flour and ghee. Gradually add warm water, kneading until a smooth and pliable dough forms. Cover the dough and let it rest for at least 30 minutes. This allows the gluten to relax, resulting in softer gunjhiya.
  • Heat a pan over medium heat and dry roast the mixed dried fruits until fragrant. Add the crumbled khoya and continue to cook, stirring constantly, until lightly browned. This enhances the nutty flavors of the filling.
  • Let the roasted mixture cool slightly. Then, either coarsely grind it in a food processor or chop it finely. Combine the ground mixture with the sweetened condensed milk, mixing until well combined.
  • Divide the dough into small, equal-sized portions. Roll each portion into a thin circle, similar to a small puri. Place a spoonful of the filling on one side of the circle.

  • Fold the dough over the filling to form a half-moon shape. Seal the edges by crimping them firmly or using a fork. This prevents the filling from leaking out during frying.
  • Heat oil in a deep pan over medium heat. Gently drop the prepared gunjhiya into the hot oil, a few at a time, ensuring not to overcrowd the pan. Fry until they turn golden brown and crispy, turning them occasionally for even cooking.
  • Remove the fried gunjhiya from the oil and place them on a wire rack or paper towel-lined plate to drain excess oil. Once cooled slightly, optionally garnish with edible silver leaf.
