Ingredients
Starter
- 2 Tbsp All-Purpose Flour
- 1/4 cup Milk
- 1/4 cup Water
- 1 pinch Baking Powder
- 1 pinch Baking Soda
Dough
- 2 1/2 cup All-Purpose Flour
- 1 tsp Baking Powder
- 1 tsp Baking Soda
- 1 Tbsp Sugar
- 1 tsp Salt
- 2 Tbsp Yeast instant
- 1/2 cup Milk
- 1 Large Egg
- 4 Tbsp Butter softened, unsalted
Chocolate Dough
- 1/3 cup Cocoa Powder unsweetened
- 1 Tbsp Butter softened, unsalted
- 2-3 Tbsp Milk as needed
Instructions
- In a small saucepan, whisk together the flour, baking powder, baking soda, and water. Cook over medium heat, stirring constantly, until the mixture thickens. This creates a starter that adds a wonderful texture to the bread. Transfer the starter to a bowl and let it cool completely.
- In a large bowl, combine the flour, yeast, sugar, and salt. Add the cooled starter, egg, and milk. Mix until a shaggy dough forms.
- Turn the dough out onto a lightly floured surface and knead for 5-7 minutes, or until smooth and elastic. Gradually knead in the softened butter, 1 tablespoon at a time, until fully incorporated. Kneading develops the gluten, which gives the bread its structure.
- Divide the dough in half. Cover one half with plastic wrap and set aside to rise.
- To the other half of the dough, add the cocoa powder and 1 tablespoon of softened butter. Knead until the cocoa powder is evenly distributed and the dough is a rich chocolate brown. Add milk, 1 tablespoon at a time, as needed, to maintain a soft, pliable dough.
- Cover the chocolate dough with plastic wrap and let it rise alongside the plain dough for about 1 hour, or until doubled in size.
- Grease a 9x5 inch loaf pan. Divide the plain dough in half. Roll each half into a log slightly shorter than the length of the loaf pan.
- Place one plain dough log in the bottom of the prepared pan. Divide the chocolate dough into 3-4 equal pieces. Roll each piece into a log and arrange them on top of the plain dough log.
- Place the second plain dough log on top of the chocolate dough logs.
- Cover the loaf pan with plastic wrap and let the dough rest for 30 minutes.
- Preheat oven to 350°F (175°C). Bake the bread for 40-50 minutes, or until golden brown and a toothpick inserted into the center comes out clean.
- Let the bread cool in the pan for 10 minutes before slicing and serving. Use a serrated knife for clean slices. This bread is delicious on its own or with your favorite spread.
