Ingredients
For the Spinach Tortillas:
- 10 oz Spinach fresh
- 1 cup All-purpose Flour
- 1/2 tsp Salt
- 1 tsp Baking Powder
- 1/4 cup Water or as needed to form dough
For the Veggie Filling:
- 1/2 cup Mushrooms cubed
- 1/2 cup Bell Peppers diced (mix of colors)
- 1/2 cup Carrot finely grated
- 1/2 cup Cabbage finely shredded, red
- 1/2 cup Lettuce thinly sliced
- 1 tsp Italian Seasoning
- 1/2 tsp Salt or to taste
- 1/4 tsp Pepper black, or to taste
- Pinch Pepper Flakes optional, red
- 2 tbsp Olive Oil
For the Creamy Dip:
- 1/2 cup Mayonnaise
- 2 clove Garlic minced
- 1 tbsp Parsley chopped
- 1/2 tsp Italian Seasoning
- 1/4 tsp Pepper black, or to taste
- 1/2 tsp Salt or to taste
Instructions
Prepare the Spinach Tortillas
- Blanch 10 oz fresh spinach in boiling water for 2-3 minutes. Squeeze out excess water and puree the spinach.
- In a bowl, combine 1 cup flour, 1/2 tsp salt, and 1 tsp baking powder. Gradually add the spinach puree and 1/4 cup water, kneading to form a soft dough. Adjust water as needed.
- Cover the dough and refrigerate for at least 30 minutes.
Make the Veggie Filling
- Heat 2 tbsp olive oil in a pan. Sauté 1/2 cup diced mushrooms, 1/2 cup diced bell peppers, until softened. Stir in 1/2 cup grated carrot, 1/2 cup shredded red cabbage, 1 tsp Italian seasoning, 1/2 tsp salt, 1/4 tsp pepper, and optional red pepper flakes. Cook until vegetables are tender-crisp.
Prepare the Creamy Dip
- In a bowl, combine 1/2 cup mayonnaise, 2 minced garlic cloves, 1 tbsp chopped parsley, 1/2 tsp Italian seasoning, 1/4 tsp pepper, and 1/2 tsp salt. Mix well.
Assemble the Pinwheels
- Roll out small portions of the spinach dough into thin circles (like small tortillas).
- Heat a lightly oiled griddle or pan and cook the tortillas for 1-2 minutes per side, until lightly browned.
- Spread a layer of the creamy dip on each tortilla.
- Top with the vegetable filling and lettuce.
- Tightly roll up the tortillas.
- Slice each tortilla roll into 1-inch thick pinwheels.
Serve
- Serve immediately with extra dip and a fresh salad.
