Ingredients
Macaroni & Pasta Water
- 2 cup Macaroni elbow macaroni or similar; cooked al dente according to package directions
- 1/2 cup Pasta Water reserved from cooking macaroni
Vegetables
Sauce & Seasoning
- 2 tbsp Olive Oil
- 1 tbsp Soy Sauce
- 1 tbsp Schezwan Sauce or other chili sauce to taste
- 1 tbsp Tomato Sauce
- 1 1/2 tsp Salt or to taste
- 1/2 tsp Pepper Flakes or to taste, red
- 1/4 tsp Pepper black, freshly ground
Instructions
Cook the Macaroni
- Cook macaroni according to package directions until al dente. Drain, reserving about 1/2 cup of pasta water. Rinse with cold water to stop the cooking process.
Sauté Aromatics
- Heat olive oil in a large skillet or pot over medium heat. Add minced garlic and sliced onions and sauté until softened, about 3-5 minutes.
Add Vegetables
- Add bell pepper, carrots, and cook for another 3-4 minutes until slightly tender-crisp.
Combine Vegetables and Seasoning
- Stir in sweet corn, cabbage, red pepper flakes, salt, and black pepper. Cook for 2-3 minutes, until cabbage is slightly wilted.
Add Macaroni and Sauce
- Add the cooked macaroni, soy sauce, tomato sauce, and schezwan sauce to the skillet. Stir well to combine. If the mixture is too dry, add a little of the reserved pasta water, a tablespoon at a time, until desired consistency is reached.
Simmer and Serve
- Reduce heat to low, cover, and simmer for 4-5 minutes, allowing the flavors to meld. Taste and adjust seasonings as needed. Serve hot and enjoy!
