Instructions

Cook the Macaroni

  • Cook macaroni according to package directions until al dente. Drain, reserving about 1/2 cup of pasta water. Rinse with cold water to stop the cooking process.

Sauté Aromatics

  • Heat olive oil in a large skillet or pot over medium heat. Add minced garlic and sliced onions and sauté until softened, about 3-5 minutes.

Add Vegetables

  • Add bell pepper, carrots, and cook for another 3-4 minutes until slightly tender-crisp.

Combine Vegetables and Seasoning

  • Stir in sweet corn, cabbage, red pepper flakes, salt, and black pepper. Cook for 2-3 minutes, until cabbage is slightly wilted.

Add Macaroni and Sauce

  • Add the cooked macaroni, soy sauce, tomato sauce, and schezwan sauce to the skillet. Stir well to combine. If the mixture is too dry, add a little of the reserved pasta water, a tablespoon at a time, until desired consistency is reached.

Simmer and Serve

  • Reduce heat to low, cover, and simmer for 4-5 minutes, allowing the flavors to meld. Taste and adjust seasonings as needed. Serve hot and enjoy!
